Our Philosophy

Raw Materials and Precision: The Essence of Our Cuisine

For both lunch and dinner, the table at Drop celebrates excellence under the guidance of Executive Chef Filippo Oggioni. Inspired by a philosophy rooted in the teachings of Gualtiero Marchesi, his cuisine focuses on absolute respect for the raw ingredients, flawless execution, and the freshness of every dish.


The menu reinterprets the great classics of Italian tradition with immediacy, technique, and balance: from local rabbit Ravioli alla cacciatora, to Vitello tonnato with fried capers, right through to the showcase of local culinary heritage, such as the renowned Marco d'Oggiono cooked ham. These are essential, direct, and meticulously crafted dishes, where flavor remains central and purity transforms into a contemporary emotion.
